Red wine pairing with chinese food is often a hit and miss affair. Using a powerful Australian shiraz reduces the chance of a mismatch. Dinner at this busy restaurant was a 12 course CNY set menu including environmentally incorrect shark's fin soup, cholesterol ladden deep fried and roasted entrees, potentially ciguatera toxin carrying coral cod and other delicacies. Colour of the shiraz was bright red with some cloudiness, likely due to the young age of the wine, there was little residue. The nose was sweet with apricot fruit. Flavours of typical shiraz spice and black pepper. It went quite well with most of the dishes.
